Kek Coklat Kukus Lapis Cream Cheese


Assalamualaikum semua.Lama sungguh saya tak update blog ini.Naik berhabuk dah.
Bagaimana raya pembaca semua?Harap-harap semua gembira dapat bersama famili di hari yang mulia.Tahu saje la orang Malaysia ni puasa sebulan raya sebulan gak.Open house berderet-deret.Jangan sampai terlepas puasa 6 pulak.Atur jadual elok-elok tau!
Dalam pertengahan bulan puasa baru ni Cik Ti menyerang dapur saya.Antara mangsanya ialah wayar oven saya.Adeh...haritu baru je teringat nak buat pavlova.Tekan suis tapi tak menyala pape.Tengok-tengok wayar sudah kena gerit.Eiiyyyy geramnya!Jadi untuk raya baru ni saya tak dapat lah baking pape.Membrowse kek kukus je.
Dan saya pun terjumpa resepi ni.Nak buat tak susah dan sungguh memuaskan!Cantik dan sedap.Tu je saya boleh kata.Jom tengok resepinya.Terimakasih kepada Yatie 

BAHAN A
  • 250 gm cream cheese
  • 60 gm gula halus ( lebih kurang 4 sdb )
  • 1 biji telur
  • 25 ml air
  • 1 sdb tpng gandum

Cara-cara
  1. Pukul cream cheese bersama dengan gula.
  2. Masukkan telur diikuti dengan air dan tepung gandum.
  3. Biarkan sebentar.

BAHAN B (KEK)
2 biji telur
1 cwn gula halus
1 sdk vanilla
2 sdb serbuk koko
sedikit garam
1/2 cwn air panas didih
1/2 cwn cwn susu segar/cair
1/2 cwn minyak jagung/masak
1 cwn tpng gandum
1 sdk baking soda
1/2 sdk baking powder

Cara-cara
  1. Pukul telur di dalam bekas lain bersama gula sehingga kembang.
  2. Setelah kembang masukkan vanilla dan diikuti dngn koko dan garam.
  3. Masukkan air panas,susu dan minyak.
  4. Setelah itu masukkan tpng gandum,baking soda dan baking powder yg telah diayak dan gaul sebati.
  5. Biarkan sebentar dan bahagi pada 2 bahagian.ntar dan bahagi pada 2 bahagian.

Cara Memasak
  1. Panaskan kukusan dan balut dngn kain penutupnya.
  2. Sapukan sedikit minyak di loyang dan alas dngn kertas minyak
  3. Letak adunan coklat dan kukus selama 15 minit.
  4. Tuang adunan cream cheese diatasnya dan kukus selama 15 minit.
  5. Setelah itu tuang lagi adunan coklat selebihnya dan kukus lagi selama 20 minit.
  6. Sejukkan dan boleh di hidangkan....

Custard Caramel Pudding

Last week before going back to hostel,my son Salman requested that I make Custard caramel the next time he comes back.So not to dissappoint him yesterday I made it.But I didn't make my normal Custard Caramel that I am most known with. My son Usamah had asked me to make the 'smooth-kind' like in the shops.
So I started recipe hunting again.Found many that used '3 eggs and 2 yolks'.I passed these kind of reipe coz I don't know what to do with the extra egg white,Then there recipes that used 7-10 eggs.
My!My! So many eggs! I will always avoid recipes that use too much eggs.Until I found this Japanese Custard recipe.And it turned out perfect! The combination of the slightly bitter caramel and sweet custard pudding is so lovely!Especially when eaten cool.
I doubled the portions coz 4 just didn't seem to be enough for us.
Lets check out the recipe.This ingredient makes 4.

Caramel
4 tbsp sugar
1 tbsp water
1 1/2 - 2 tbsp hot water

Egg mixture
2 eggs
250 ml fresh milk
5 tbsp sugar

4 pudding moulds
some unsalted butter

These are the moulds I used

  1. Butter the moulds to make it easy for the pudding to come out later.
  2. To make the caramel place the sugar and water in a pot on medium heat. Let it sit until the sugar turns brown. Remove the pot from the heat and add in the hot water. Keep it away from you so thet the hot caramel sauce doesn't burn your hand.
  3. Pour the caramel into the pudding moulds. Put aside.
  4. Next crack the 2 eggs into a bowl. Lightly beat the egg. Don't lift the tip of the whisk leave the bottom of the bowl to avoid creating too much foam.
  5. add milk and sugar in a pot on low heat until sugar is dissolved.
  6. Add the milk into the egg while continously whisking the egg.
  7. Sieve the mixture.
  8. Pour the mixture into the moulds and steam it.
  9. Make sure the water for steaming is under boiling point to ensure smooth top. Covering each mould with foil helps.
After cooled.

I made another batch today for Salman to take back to hostel.

Nasi Mandiy Kambing (Laham Mandiy)-Versi Sakinah Omar

Selamat berpuasa semua.Lama sangat tak update blog ni.
Saya nak kongsi hari ini resepi Nasi Mandi Daging Kambing (Laham Mandiy).Saya seperti biasa 'search' dulu di internet.Menonton video dan membaca resepi-resepi yang berbeza.Banyak juga versi yang ada.Saya ambil yang paling mudah je.Dan olahkan ikut selera kami.Hehehe.
Ni rupa dia. 
Jom kita tengok resepinya.
Stok tulang
1 peha daging kambing (potong mengikut saiz yang anda mahu)
15 biji buah pelaga
15 kuntum bunga cengkih
15 biji lada hitam
1 sudu kecil jintan putih
1 biji buah pala (diketuk)
3 helai bay leaves
1 inci halia (diketuk)
Rebus tulang & daging sehingga empuk bersama rempah ratus, bay leaves dan halia. 
Setelah daging lembut asingkannya ke dalam satu bekas.

Bahan-bahan untuk daging kambing
1 labu bawang besar dipotong dadu
1 biji tomato besar dipotong dadu
1 sdb rempah Kabsah
Gorengkan kedua bahan-bahan ini dengan sedikit minyak sehingga layu.Setelah layu (tak perlu garing) keluarkan dan tumbuk.Lumurkan ke daging tadi beserta rempah Kabsah.
Untuk membuat rempah Kabsah bolehlah lihat resepinya di sini.
Kemudian masukkan ke dalam bekas dan bakar dalam ketuhar 200C untuk 30 minit.

Setelah dilumur bawang dan tomato goreng yang ditumbuk beserta rempah Kabsah

Dibakar untuk menambah aroma

Nasi
1 kg beras basmathi
stok tulang secukupnya
2 sudu minyak sapi / mentega / minyak zaitun/mentega
1 labu bawang besar yang besar (potong dadu)
1 biji tomato yang kecil (potong dadu)
4 biji buah pelaga
4 kuntum bunga cengkih
5 biji lada hitam
Garam 
Tumis bawang besar bersama minyak sapi / mentega / minyak zaitun sehingga layu. Masukkan bahan tumis, garam, beras basmathi dan stok tulang.Biarkan sehingga mendidih lalu masukkan tomato yang telah dipotong dadu.Bila air sudah kering bolehlah titikkan sedikit pewarna kuning.Jangan kacau nasi lagi sekarang.

Akhir sekali,panaskan beberapa ketul arang.Masukkan daging yang sudah siap dibakar ke dalam nasi.Masukkan satu mangkuk kecil dari aluminium ke atas nasi.Atau gunakan foil untuk bentukkan seperti mangkuk.Masukkan sedikit minyak ke dalam mangkuk tersebut.Bila arang sudah siap dibakar masukkan ke dalam mangkuk yang berisi minyak tadi.Asap akan terhasil.Tutup periuk nasi rapat-rapat dan biarkan asap meliputi nasi dan daging.Ini akan memberi rasa yang istimewa pada nasi.

Potong tomato dan timun menjadi kiub-kiub kecil.Gaulkan bersama asam limau dan garam.

Nasi ini sedap dimakan dengan sup (gunakan lebihan air rebusan tadi) sambal dan salatah.

Banana Nutella Swirl Cake



Everyone loves Nutella.So when a friend brought me a big bottle of Nutella,besides the usual spread-on-the-bread style I thought of making it into a cake.Not unusual for me don't you think?
So it was browsing time as usual until I came upon this recipe.Easy and super duper delicious and moist.Check it out!

 Ingredients
  • 1.5 cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup white sugar
  • 1 tsp cinnamon
  • 1 cup banana, mashed (about two medium bananas)
  • 1/3 cup canola oil-I used normal cooking oil
  • 1 tsp vanilla
  • 1 egg, lightly beaten
  • 1/2 cup applesauce
  • 1/2 cup milk
  • 2 tbsp Nutella-I put 3 tbsp
Instructions:
  1. Preheat oven to 375 F. Lightly mist a 9 x 9 baking dish with cooking spray.
  2. In a large bowl, whisk together the dry ingredients, from the flour to the cinnamon.
  3. In a smaller bowl, mix together the mashed banana, applesauce, oil, egg, and vanilla.
  4. Pour your wet ingredients into the dry, and mix just until blended.
  5. Pour into your baking dish. In half-teaspoonfuls, dot the surface of the batter with the Nutella. Using a sharp knife, swirl it through the batter.
It looks like marble.

6.Place cake in the middle of the oven and cook for 20 min.Cake is done when the tester inserted in the middle of the pan comes out clean. 
7.Cool pan on wire rack for about 20 mn.Cake will be tender and delicate,so remove carefully from pan.Or just cut and serve from the pan.

Chocolate Cake With Mayonnaise



I had been eying to make this cake ever since I came across it.Chocalate Cake with Mayonnaise?It couldn't be more weirder for me at first.I've made cakes using buttermilk,and sour cream and yogurt but never with mayonnaise.So I said why not give it a try...

Actual recipe here.
  • 2 cups of all purpose flour
  • 1 cups of cocoa powder
  • 2 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1 cup mayonnaise
  • 1 cup castor sugar
  • 1 cup condensed milk
  • 1 egg
  • 1 cup hot water
  • 3/4 cup vegetable oil

Process:



  1. Preheat your oven to 175 degrees Celcius.
  2. Whisk the flour,cocoa powder,baking powder,bicarbonate of soda, put aside.
  3. In another bowl put mayonnaise,castor sugar,condensed milk,egg,hot water and vegetable oil.Mix well.
  4. Add the wet ingredients to the dry ingredients.Mix well.Just don't overmix it.
  5. Place in a  9"  square baking pan.
  6. Bake for 50-55 minutes.
  7. Let it cool on a rack before you put the topping.
  • For the topping you will need:(I only made half of this)

2 3/4 cups confectioner sugar
  • 6 tablespoons unsweetened cocoa powder
  • 6 tablespoons butter
  • 5 tablespoons evaporated milk
  • 1 teaspoon vanilla extract

Directions

  1. In a medium bowl, sift together the confectioners' sugar and cocoa, and set aside.
  2. In a large bowl, cream butter until smooth, then gradually beat in sugar mixture alternately with evaporated milk. Blend in vanilla. Beat until light and fluffy. If necessary, adjust consistency with more milk or sugar
Cracked but beautiful to my eyes...Hahaha.

Chocolate Oil Cake

I was going to my mums house yesterday morning.My Mak Tok has moved over to her house again and I was eager to meet her.I wanted so bad to bring something along.But every recipe I came upon had an ingredient that I didn't have at hand in the house.And I was so lazy to go out to the shop so early in the morning.I got so frustrated coz time was running out and I wouldn't be able to bake anything if I take more time looking for a recipe.
I don't know why but I take a longer looking for a recipe than making the the cake itself.And it happens almost all the time coz I will usually make different recipe each time.Sigh...!
Then I found this recipe and was I sooo happy coz it required ingredients that was available in the house.But I made a few minor alterations to it and it worked wonders!It makes quite a big cake.You can half it if you want.The actual recipe doesn't use egg or butter.
Lets check it out...

Ingredients
2 cups white sugar
3 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup unsweetened cocoa powder
2 cups water + 1 egg (I added this.I place the egg in a measuring cup and added water till it became 2 cups.You can ommit this if you want)
1 cup vegetable oil
2 tablespoons distilled white vinegar
1 teaspoon vanilla extract
2 tbsp sour cream (I added this coz I love the effect of adding it to my batter.Its optional)

Process:
1. Preheat oven to 175 degrees C.
2. In a large bowl, mix sugar, flour, baking soda, salt and cocoa.
3. Add water,egg,sour cream, vegetable oil, vinegar, and vanilla.
4. Beat by hand until smooth.
5. Pour into a 9x13 inch pan.I used a round 9" baking pan.
6. Bake 45 minutes, or until toothpick inserted into center of cake comes out clean.


For the topping I used;
 1/2 cup cocoa powder
1/2 cup evaporated milk
1 tbsp butter/ margerine


I love the cracks.

Mayo Doughnuts

Umamah requested that I make some doughnuts today. Infact she had been asking for a while now. I just wasn't too sure I can make them. But I thought I'd give it a try today. And was I glad I did!
The texture is soft and fluffy. Just perfect!
So what are you waiting for?
Lets check the ingredients.


2 1/2 cups of all purpose flour
1 1/2 tbs mayonnaise
1 1/2 tbs margerine
1 tbsp powdered milk
1 egg slightly beaten
140 ml warm water
3 tbsp sugar
4 gms or 1 1/2 tsp active dry yeast


Castor sugar for dusting the doughnuts.


Process:
1. Put all the ingredients in a bowl.Use a fork and stir everything untill it forms in crumbs.Then add the warm water.Mix well.Cover the bowl with cling wrap and put it in a warm place and let it rise for about 1 hour.
2. When the dough has risen punch out the air.
3.  Turn the dough out onto a floured surface, and gently roll out to 1/2 inch thickness. Cut with a floured doughnut cutter. Let doughnuts sit out to rise again until double. Cover loosely with a cloth. 
4. Heat oil in a deep-fryer. When the oil is hot slow down the heat to medium.You dont want to burn the doughnuts.
5.  Slide doughnuts into the hot oil using a wide spatula. Turn doughnuts over as they rise to the surface. Fry doughnuts on each side until golden brown. Remove from hot oil, to drain on a wire rack. Dip doughnuts into the castor sugar while still hot, and set onto wire racks to drain off excess..




Frying the doughnuts until golden brown.




Drain any excess oil then dip in the castor sugar
Served.Soft and fluffy doughnuts for tea.

Laura Vitale's Chocolate Chip Muffins


Actually I made these muffins earlier than my Chocolate Muffins but didn't have time to post it.Can't remember the occasion for baking them either.Fact is I don't bake for a reason.I do it coz I love baking.But of course I will make sure that there will be others to finish them up.Or else...You know what will happen.Ahaks.
This recipe is by far the best muffin recipe I've tried so far.Its from Laura Vitale.I do believe the sour cream plays a special role in making these muffins soft and fluffy and delicious.
Should I say more?I don't think so. You guys really need to try them.
Ingredients:
2 cups of Flour
1 Tbsp of Baking Powder
½ tsp of Salt
1/8 tsp of Ground Cinnamon

1 12 cups of Milk Chocolate Chips

2/3 of a cup of Whole Milk
½ cup of Melted Unsalted Butter
2 Tbsp of Sour Cream
2 Eggs
½ tsp of Vanilla Extract
1/3 cup of Granulated Sugar
1/3 cup of Brown Sugar
Process:
1) Preheat your oven to 175 Celcius. Line a paper cups in a  muffin pan, set aside.

2) In a small bowl mix together the first 4 ingredients and set aside.

3) In another small bowl add the chocolate chips and half a cup of the dry ingredients mix and toss to make sure each piece of chocolate chips are coated in the flour mixture.

4) In a large bowl mix together the remaining ingredients until combined. Add the dry ingredients and just mix to combine but not over mixing. Using a spatula fold in the chocolate chip mixture and make sure they are evenly spread out through out the batter.

5) Using a large ice cream scoop, divide the batter evenly in the prepared muffin pan.

6) Bake for 15 to 18 minutes or until a toothpick inserted in the center of the muffin comes out clean.
See how the chocolate chips runs through the muffins and doesn't just fall to the bottom?Awesome!



Sakinah Omar's Chocolate Muffins

I was having guests over yesterday morning.
What to bake?What to bake? 
Baking something will always pleases my guests.Especially those who have been tortured watching fotos of food I baked on FB. Huhuhu...
The least I can do is make them something when they come over.

I looked up for a chocolate muffin recipe but didn't find something that would suit my taste.
So I made my version of chocolate muffins which was an in between of Laura Vitale's Chocolate Chip Muffins and Nigella Lawson's Chocolate Chips Muffins.

I must say among all the muffin recipes I've tried I just love Laura's recipe.And I have to admit that my muffin was superbly delicious. You just have to try them!
I ran out of chocolate chips so I only threw  as bit as toppings.But have it in the dough would be absolutely awesome!

Ingredients:
1 3/4  cups of Flour
1 Tbsp of Baking Powder

1/3 cups of Cocoa

2/3 of a cup of Whole Milk
½ cup of Melted Salted Butter
2 Tbsp of Sour Cream
2 Eggs
½ tsp of Vanilla Extract
1/3 cup of Granulated Sugar
1/3 cup of Brown Sugar

1 tsp coffee+1 tsp warm water
1 1/2 cups of Chocolate Chips 


Process
1) Preheat your oven to 175 Celcius. Line a paper muffin cups on a muffin pan, set aside.

2) In a small bowl sift  the flour,cocoa and baking powder then set aside.

3)  In another small bowl add the chocolate chips and half a cup of the dry ingredients mix and toss to make sure each piece of chocolate chips are coated in the flour mixture.
4)  In a large bowl mix together the remaining ingredients until combined. Add the dry ingredients and just mix to combine but not over mixing.

Banana Muffins with Brown Sugar Cream cheese Frostings

Grandma’s Banana Bread
1 cup of granulated sugar
1 stick of unsalted butter, softened (room temperature)
 1 large egg, room temperature
 3 ripe bananas, mashed
 2 cups of all-purpose flour
 1 teaspoon of baking soda
 2 teaspoons of baking powder
 1 teaspoon of cinnamon
 1/4 teaspoon of nutmeg dash of salt
 1/2 cup of milk 2 teaspoons of vanilla extract


  1.  Start by turning the oven on 175 celcius.  
  2. In a large mixing bowl beat 1 stick of unslated butter, softened and 1 cup of granulated sugar.  Add 1 large egg.  
  3. Mash three ripened bananas, then add them to the sugar and butter mixture. 
  4.  Next, add 2 cups of all-purpose flour, the baking soda, baking powder, cinnamon, nutmeg, and salt.  
  5. Mix all of these ingredients together.
  6. Last, add the 1/2 cup of milk and 2 teaspoons of vanilla extract.  
  7. place paper cups in your muffin pan.  Pour the mixture in and place in the oven.  
  8. Bake for 12 - 15 minutes until toothpick when inserted in the middle comes out clean.  
When the banana muffin is done baking take out and set to cool before frosting it.                                           For Brown-Sugar Cream Cheese Frosting: Makes 2 1/2 cups

 1/2 cup (1 stick) of unsalted butter, room temperature
 8 ounces of cream cheese
 1 cup of packed light-brown sugar

 With an electric mixer on medium-high speed, beat butter, cream cheese, and brown sugar until combined and smooth.  Use immediately or store in an air-tight container in the refrigerator.
This is the end result.So tasty!

Chocolate Brownies Cupcakes

My car was still in the workshop so I had to ask a friend to pick up my girls. Trying to be thanksful for her deed I decided to make a sweet treat for her and her daughter Humaira who is Umamahs best friend too.

I don't know why I have this bad habit of wanting to try a new recipe almost everytime I want to bake something. So AGAIN I went recipe hunting trying to find a recipe that fits the ingredients available in my bakery cupboard. Finally I found a video on this recipe and I chose to try it.At this moment I'm typing this entry,the brownies which I made in a muffin pan is smelling wonderfully cocoalicious.

You know that wonderful smell of cocoa in the oven right? It smells good. I bet it tastes good too. Lets check out the ingredients. Very simple and basic ingredients only.

1/2 cup butter 1 cup white sugar
2 eggs 1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder

 For the frostings.
3 tablespoons butter, softened
3 tablespoons unsweetened cocoa powder
1 tablespoon honey
1 teaspoon vanilla extract
1 cup confectioners' sugar

 Directions
 1. Preheat oven to 350 degrees F (175 degrees C).
 2. Grease and flour an 8 inch square pan.
 3. In a large saucepan, melt 1/2 cup butter.
 4. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla.
 5. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder.
 6. Spread batter into prepared pan.(I put my batter inyo small muffin pan 3/4 full)

 7. Bake in preheated oven for 25 to 30 minutes. Do not overcook.


 To Make Frosting:
Combine 3 tablespoons butter, 3 tablespoons cocoa, 1 tablespoon honey, 1 teaspoon vanilla, and 1 cup confectioners' sugar. Frost brownies while they are still warm.

5 Minute Microwave Chocolate Cake in a mug

I was going thru some recipes on the net when suddenly I felt I wanted to eat chocolate cake. Huhuhu. So I serched for a microwave chocolate cake recipe that was easy and fast. I wasn't sure how my microwave would turn the batter coz its just a simple microwave but I thought I'd give it a try. But it turned out sooo good, I ate it warm. Couldn't wait for it to cool.
Lets go over the ingedients.

4 tablespoons flour
4 tablespoons sugar
2 tablespoons unsweetened cocoa
2 tablespoons whisked egg -
1 egg is too much, 1 egg white is too eggy, 1 yolk is too dense, but 2 tblsp is just right!( I ran out of eggs so I ommitted this)
3 tablespoons milk(I put 4)
3 tablespoons oil
3 tablespoons chocolate chips
splash vanilla
a pinch of baking powder (I added)
2 tablespoon of yogurt (optional, I added coz I ommitted the egg)

1. Add all of the dry ingredients to the mug and mix.
2. Add the egg and combine well. It gets pretty pasty at the point.
3. Stir in milk and oil.
