Apam Beras Lagi!

Demam kuning melanda minggu lepas dan setiap hari saya akan membuat 1 kueh kuning.Dah beralih mood dari meroti ke membuat kueh Melayu.Jadi saya mulakan dengan membuat apam beras sekali lagi.Kali ini saya tambajhkan airnya dari resepi asal.Ternyata hasilnya cukup memuaskan kerana hasilnya lebih lembut.

Buat dalam bekas lompang.Pastikan bekas dipanaskan dahulu dalam kukusan sebelum memasukkan adunan.

Apam Pisang Cokelat/ Chocolate Banana Apams

Assalamu'alaikum semua dan salam sejahtera.
Semalam kami sekeluarga telah mengahdhiri kenduri sepupu saya di Sungai Petani,Kedah.
Bertolak dari rumah pada jam 8.30 pagi dan sampai sana jam 12.Pusing-pusing cari jalan nak ke rumahnya(boleh pulak silap jalan sebab dah lama tak ke sana) dan tiba di rumah pakcik saya pada jam 12.30 tengahari.Terus dibawa makan dan selepas makan berjumpa saudara-mara yang lama tak ketemu lalu bertolak pulang jam 2.30 petang.Ada seorang saudara memberi kami pisang dan rambutan.Apa lagi,hari ini saya mengodek mencari resepi kueh yang menggunakan pisang.Tak larat nak makan muffins dah.Badan pulak terasa amat penatnya jadi saya memilih untuk membuat apam ini.Mudah ringkas namun sangat menyelerakan.

Bahan-bahannya:
2 cawan tepung gandum   2 cups of flour
2 sb serbuk koko             2 tbs of cocoa powder
1 st soda bikarbonat         1 tsp of soda bicarbonate
1 st serbuk penaik            1 tsp of baking powder
1 st garam                        1 tsp of salt
1 cawan pisang lenyek      1 cup of mashed bananas
1 cawan minyak masak (Saya guna 3/4 cawan sahaja)   1 cup vege oil (I used 3/4 cup)
1 1/2 cawan gula perang    1 1/2 cup brown sugar
2 biji telur                           2 eggs


Caranya Method
  1. Panaskan kukusan.Heat the steamer
  2. Ayak tepung gandum,serbuk penaik,soda dan serbuk koko. Sift flour,soda bicarbonate,baking powder and cocoa powder into a bowl.
  3. Dalam bekas lain pukul telur dengan gula perang kemudian masukkan minyak dan akhir sekali pisang yang telah dilenyek.Kacau hingga sebati.In another bowl whisk eggs and brown sugar.Then add in oil and lastly the mashed bananas until well blended.
  4. Masukkan bahan basah ke dalam bahan kering dan kaup-balikkan sehingga sebati.Put the wet ingredients into the wet ingredients and mix well.
  5. Masukkan dalam acuan dan kukus selama 15-20 minit dengan api yang besar.Put batter into small cups and steam for about 15-20 minutes on high fire.

Steamed Yogurt Apam/Apam Yogurt

Assalamualaikum everyone.Just haven't been myself lately.Sometimes I feel so unenergetic.But I still needed to cook.What with mum-in-law in the house.So I started looking round for something to make for tea.I got tempted looking at pictures of this apam so decided to give it a try.
 Ingredients:
  • 2 cups castor sugar(you can put less if you want it less sweet)
  • 1 tsp ovelette
  • 2 cups flour
  • 1 cup plain yogurt
  • 2 eggs
  • 1/2 tsp double action baking powder
  • 1 tsp cocoa powder
  • 1 tsp chocolate emulco

Bahan-bahannya:
  • 2 cawan gula castor (boleh kurangkan jika tidak mahu terlalu manis)
  • 1 st ovallete
  • 2 cawan tepung gandum
  • 1 cawan yogurt asli
  • 2 biji telur
  • 1/2 sdt double action baking powder
  • 1 sdt serbuk koko
  • 1 st coklat emulco
Method:
  1. Beat the eggs and sugar untill fluffy and light.It will turn to pale yellow.
  2. Add in yogurt,ovellette and vanilla essence.Beat again untill well mixed.
  3. In another bowl,sift flour with baking powder.Then add the wet ingredients into the wet ingredients.
  4. Stir well untill all ingredients are well blended.
  5. Scoop about 5 tbsp and put it in a separate bowl.add to it the cocoa powder and the chocolate emulco.Stir well.
  6. Put the batter in a muffin cup about 3/4 full. Just drop in a small portion of the chocolate batter on top.
  7. Steam on high fire.Make sure the steamer is boiling hot before placing the muffin cups.
  8. steam for about 15 minutes.

Caranya:
  1. Pukul telur dengan gula sehingga kembang dan bertukar warna putih pucat dan pekat beralun.
  2.  Masukkan yogurt,ovellete dan esen vanila, pukul lagi.
  3. Kemudian masukkan tepung yang telah diayak dengan baking powder. Kacau sehingga sebati.
  4. Asingkan sedikit daripada adunan tersebut (lbh krg 5 sdb) dan campurkan serbuk koko dan coklat emulco, gaul sebati.
  5. Sendukkan adunan putih ke dalam cup muffin 3/4 cup, sudukan sedikit adunan coklat atasnya.
  6. Kukus dengan api kuat, pastikan kukusan sudah betul-betul panas baru letakkan kuih tadi. Kukus lebih kurang 15 minit, adunan yang masak akan mekar tersenyum...(ada jugak yang tak tersenyum kadang tu,tapi rasanya pasti sedap)

Rice Apam

Assalamu'alaikum everyone,
What a day today.Extremely busy and stressing morning.But then I still managed to make these with HIS grace.
Getting out from the normal baking I suppose.
So lets see the ingredients.

2 cups of rice
2 cups of flour
2 cups of rice flour
1 cup brown sugar
3/4 cups white sugar
2 1/2 cups water ( I used 3 cups and found the texture much softer)
1 tsp dried active yeast
grated coconut and salt


Method:
  1. Blend rice and water well.
  2. Add brown and white sugat to the mixture.
  3. In another bowl add flour.rice flour and yeast.
  4. Add in the blended miture. Stir and mix well.
  5. Leave for 3 hours.
  6. Put in small bowls and steam for 15 minutes.
  7. Eat with grated coconut mixed with salt.

Chocolate chocolate chip muffins with yogurt


Assalamualaikum,
Sebagaimana yang dijanjikan,saya nak bagi satu resepi muffin yang sangat sedap dan berkhasiat kerana di samping ianya mengandungi susu segar dan telur,ianya juga mengandungi yogurt! pagi semala saya mencuba dua resepi serentak.Lepas ni kena slow down sikit buat muffin dan cari benda lain plak untuk dicuba.anak-anak sampai tak larat makan dah myffin.Hehehe...
Isk...Dok sembang jer.Jom layan resepi ni yang saya ambil dari dapur Izzahdaut.
                                 

Bahan-bahannya:
1 1/2 cawan tepung gandum
1 sb membumbung serbuk koko
3/4 sk baking powder
1/4 sk soda bikarbonat
1/2 sk garam
1/2 cawan + 2 sb gula perang
3/4 cawan coklat chip
1 biji telur- dikocok sedikit
1 cawan susu segar
1/4 yogurt
1/4 minyak sayur
1 sudu kecil esen vanilla



Caranya:

1. Ayak tepung, serbuk koko, soda bikarbonat,serbuk penaik dan garam ke mangkuk besar.
2. Kemudian masukkan gula perang dan coklat chip. Gaul semuanya sebati. Ketepikan.
3. Dalam mangkuk yang lain, sebatikan telur, susu segar, yogurt, minyak sayur dan essence vanilla.
4. Masukkan bahan basah ke dalam mangkuk tepung tadi.
5. Adunan sedikit cair.
6. Masukkan ke dalam muffin cup 3/4 penuh atau hampir penuh.
7. Bakar pada suhu 180 C selama 25 minit.
 
Masya Allah...gebus dan comei sekali.Rasanya pun mmmm....!!

Chocolate chip muffins(2)

Assalamu'alaikum everyone and a very good morning.
Yesterday was a family outing day.My dear husband had cancelled his late morning class and we planned to head to SMI Hira' Jeram where Salman is studying to pick him up to attend a wedding.So I made 2 recipes of muffins for munching along the way.This is the second batch I baked.I post the first batch later.I've just gone muffin crazy nowadays.Always looking around for new recipes and trying them out.But so far savoury muffins don't attract any fans from anyone in the house.I've tried them twice but I find that I'm the only one eating them.Enough of all my ramblings.Lets see the ingredients and method that I got from allrecipes.com
Ingredients:
  • 2 cups all-purpose flour
  • 1/2 cup white sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 1/3 cup vegetable oil
  • 1 egg
  • 3/4 cup mini semi-sweet chocolate chips
  • 3 tablespoons white sugar
  • 2 tablespoons brown sugar



Directions

  1. Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
  2. In a medium bowl, combine flour, 1/2 cup sugar, baking powder, chocolate chips, and salt; mix well. In a small bowl, combine milk, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
  3. Fill cups 2/3 full. Sprinkle tops of muffins before baking with a combination of 3 tablespoons sugar and 2 tablespoon brown sugar.
  4. Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.
