Mayo Doughnuts

Umamah requested that I make some doughnuts today. Infact she had been asking for a while now. I just wasn't too sure I can make them. But I thought I'd give it a try today. And was I glad I did!
The texture is soft and fluffy. Just perfect!
So what are you waiting for?
Lets check the ingredients.

2 1/2 cups of all purpose flour
1 1/2 tbs mayonnaise
1 1/2 tbs margerine
1 tbsp powdered milk
1 egg slightly beaten
140 ml warm water
3 tbsp sugar
4 gms or 1 1/2 tsp active dry yeast

Castor sugar for dusting the doughnuts.

Process:
1. Put all the ingredients in a bowl.Use a fork and stir everything untill it forms in crumbs. Then add the warm water.Mix well.Cover the bowl with cling wrap and put it in a warm place and let it rise for about 1 hour.
2. When the dough has risen punch out the air.
3.  Turn the dough out onto a floured surface, and gently roll out to 1/2 inch thickness. Cut with a floured doughnut cutter. Let doughnuts sit out to rise again until double. Cover loosely with a cloth.
4. Heat oil in a deep-fryer. When the oil is hot slow down the heat to medium. You dont want to burn the doughnuts.
5.  Slide doughnuts into the hot oil using a wide spatula. Turn doughnuts over as they rise to the surface. Fry doughnuts on each side until golden brown. Remove from hot oil, to drain on a wire rack. Dip doughnuts into the castor sugar while still hot, and set onto wire racks to drain off excess..

Frying the doughnuts until golden brown.

Drain any excess oil then dip in the castor sugar
Served.Soft and fluffy doughnuts for tea.
