My ex student called up saying she was coming over with a friend of hers. I had only just arrived from KL at that time and was not feeling too well. 1/2 cup butter, melted
1 cup white sugar
2 eggs
1/2 cup self-rising flour
1/3 cup unsweetened cocoa powder
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup chopped walnuts (optional)- I used almond nibs
Directions
1.Preheat oven to 175 C.
2.Grease and flour an 8x8 or 9x9 inch baking pan.
3.In a medium bowl, beat together the butter and sugar.
4.Add eggs, and mix well.
5.Combine the flour, cocoa and salt; stir into the sugar mixture.
6.Mix in the vanilla and stir in walnuts if desired. Spread evenly into the prepared pan.
7.Bake for 25 to 30 minutes in the preheated oven, or until edges are firm. Cool before cutting into squares.
