Cinnamon Rolls. This time its Laura Vitale's.

Bismillahirrahmanirrahiim.
Its Sunday. And since I'm not going anywhere I decided to make Cinnamon Rolls.
I slipped and fell the day before when we were saving water due to the news of the water shortage.
There was no major injury but my body aches a lot.
This time around I'm trying Laura Vitale's recipe.
I'm also trying to get to know my oven better so here goes.

Makes 14 to 16 Rolls
Prep time: 30 mins
 Cook time: 30 mins

Ingredients:
 1 Package of Dry Yeast
 ¾ cup of Whole Milk
 ¼ cup of Granulated Sugar
¼ cup of Water, warmed up to 115 degrees
 ¼ tsp of Vanilla Extract
1 Egg 1 tsp of Salt
¼ cup of Unsalted Butter, melted
4 cups of All Purpose Flour
¼ cup of Melted Butter, to brush over the top before baking

 For the Filling,
1/3 cup of Unsalted Butter, at room temperature
 ¾ cup of Brown Sugar
 ¼ cup of Granulated Sugar
1 1/2 Tbsp of Ground Cinnamon

 For the Glaze,
¼ cup of Cream Cheese, at room temperature
1 Tbsp of Butter, at room temperature
1 1/4 cups of Powdered Sugar
 ½ tsp of Vanilla Extract
3 to 4 Tbsp of Warm Milk

 Process,
 1) In a small bowl, combine the warm water and 1 tsp of the granulated sugar, sprinkle the yeast over the top and let it sit for about 5 minutes.

 2) In the bowl of a standing mixer fitted with a dough hook, mix the egg, milk, salt, sugar and melted butter. Add 2 cups of the flour and the water, vanilla and yeast mixture, mix until its all incorporated and slowly add about 2 more cups of flour. Turn the speed up to medium and let it mix for about 5 to 7 minutes or until you have a smooth dough.

 3) Oil a large bowl with some vegetable oil and set aside. Take the dough out of the mixer and pull it together with your hands to form a ball. Place it in the oiled bowl and oil the top of the dough with a little vegetable oil. Cover with plastic wrap and place it in a warm spot to rise for about 2 hours.

 4) In a small bowl, mix together the brown sugar, granulated sugar and cinnamon for the filling, set aside.

 5) When doubled in size, punch the dough down and roll it out onto a floured surface into a 15x9” rectangle. (I used two 9" and 10" baking pan instead).Spread the soft butter over the top and sprinkle evenly over the sugar and cinnamon mixture.Starting from one of the long ends, tightly roll the dough into a jelly roll form. Cut into 14 to 16 slices (make sure they are even) and place them cut side down in a well buttered 9x13 baking pan. Cover with plastic wrap and let put them back into a warm spot to rise for another 1 ½ hours.

6) Meanwhile preheat your oven to 350 degrees or 175 degree Celcius/

 7) Once risen, brush them with some melted butter and bake them for about 30 minutes or until golden brown.

 8) While the cinnamon rolls cool for a few minutes make the glaze. Mix all the ingredients of the glaze in a bowl except for the milk, once the cream cheese is all mixed, slowly add the milk until you get a runny glaze consistency.

Immediately pour the glaze over the cinnamon rolls and enjoy!
Aren't they just soooo tempting?

Banana Bread

I was kinda upset today over a few things...a few people.I dunno why but I get extra sensitive with people I love and care.I was in such a bitter mood.Just felt like getting in a fight with somebody. But of course that is totally a 'no-no'.So I diverted the bitter mood I was in into something productive. What is better than bakin?Hahaha.
I had 3 over riped bananas that had been screaming so that I do something with it.I've tried so many banana cake and banana muffins recipes before so I thought I'd try a banana bread recipe this time around.Went through a few recipes and chose this one.It had a video so that made it mush easier.

1 cup walnuts or pecans toasted and coarsely chopped (optional)-I omitted this since I didn't have any
1 3/4 cups all-purpose flour
3/4 cup  granulated white sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
2 large eggs, lightly beaten
1/2 cup (113 grams) unsalted butter, melted and cooled-I used Buttercup which is obviously salted
3 ripe large bananas  mashed well (about 1-1/2 cups)
1 teaspoon pure vanilla extract

1. Preheat oven to 180 degrees C and place oven rack to middle position.
2. Butter and flour (or spray with a non stick vegetable/flour spray) the bottom and sides of a 9 x 5 x 3 inch (23 x 13 x 8 cm) loaf pan. Set aside.

3. Place the nuts on a baking sheet and bake for about 8 to 10 minutes or until lightly toasted. Let cool and then chop coarsely.
4. In a large bowl combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and nuts. Set aside.
5. In a medium-sized bowl combine the mashed bananas, eggs, melted butter, and vanilla.
6. With a rubber spatula or wooden spoon, lightly fold the wet ingredients (banana mixture) into the dry ingredients just until combined and the batter is thick and chunky. (The important thing is not to over mix the batter. You do not want it smooth. Over mixing the batter will yield tough, rubbery bread.)
7. Scrape batter into prepared pan.
8. Bake until bread is golden brown and a  toothpick inserted in the center comes out clean, about 55 to60 minutes.
9. Place on a wire rack to cool and then remove the bread from the pan. Serve warm or at room temperature.
10.This bread can be frozen.
Left to cool.
The cinnamon gives a nice taste to it.And coming inside a house baking this bread is just totally awesome!

Pillow Soft Rolls

I made these rolls some time ago.But the recipe had been hibernating in the Drafts.
Its simple and eaten warm with Curry or anything else is very comforting. You can also put fillings as I did.Anything to your liking.I put sardines.

4 1/2 teaspoons active dry yeast
1/2 cup warm water (110 degrees F to 115 degrees F)
2 cups warm milk (110 to 115 degrees F)
6 tablespoons shortening
2 eggs
1/4 cup sugar
1 1/2 teaspoons salt
7 cups all-purpose flour
Directions

In a large mixing bowl, dissolve yeast in warm water. Add the milk, shortening, eggs, sugar, salt and 3 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough.
Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes (dough will be sticky). Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour.
Punch dough down. Turn onto a lightly floured surface; divide into 24 pieces. Shape each into a roll. Place 2 in. apart on greased baking sheets. Cover and let rise until doubled, about 30 minutes. Bake at 350 degrees F for 20-25 minutes or until golden brown. Remove to wire racks.

I made it again a few days later. This time without any fillings and we ate it with soup.Hehehe.

Roasted Banana With Chocolate Chip Cinnamon Rolls

I haven't been cinnamon rolling for some time now. Missed it.Hehehe.
But I wanted to try something different after founding a recipe for a chocolate cinnamon roll recently.
But then I found this recipe that used roasted banana.Sounded interesting. So I bought some bananas.
These kind.
I had all the other ingredients available. And this time around I used high protein flour a.k.a. bread flour. And it turned out to be extra soft and fluffy.

For roasting the bananas the ingredients are as follow:
2 ripe bananas cut into 1/4 inch slices
2 Tablespoons butter, cut into small pieces
2 Tablespoons brown sugar
Preheat oven to 425 degrees F.  Place banana slices and cut up pieces of butter into a small baking dish.  Sprinkle with brown sugar and bake for 25 minutes or until golden and bubbly.  Remove and let cool for 10 minutes.  Next, use a fork to smash roasted bananas until well combined

You can see the method from Pinky Palate.
I used my Cinnamon rolls recipe 2 .You can check it out here.
I replaced the usual raisins with roasted bananas and chocolate chips.ut less cinnamon than I usually use too.
The rolls got bigger after I left it to proof.

Yummy.

Breakfast rolls

Assalamu 'alaikum and good morning everyone.
Yesterday my family and I went to my mums house. She had a gathering with her friends after her usual Wednesday religious class. Actually she made her aqiqah. Yes, you read it right. Her own aqiqah. She was talking with my dad one day about their grandchildren. Who has aand who hasn't made aqiqah. And then it strucked her whether her mother had made aqiqah for her or not. She aked my granma but she couldn't recall. So my mum decided to make hers.
She went and chose the goat herself. And saw it being slaughtered. Took pictures of the 'handsome guy' as she called it before slaughtered and after. She was so happy that everything went well.
I made two cakes to bring to her house. Chocolate carrot cake and Peach and custard cake.

Carrot and chocolate cake.it was still warm  when I took this foto.
Topped it up later with some creamcheese topping.

Peach and custard cake.Always a hit at any occasion.
Many people really liked them and even wanted to order. But I had to turn them down. I can't take orders anymore.
Anyway I brought home the Lamb Kuzi which I didn't taste yesterday. I wasn't feeling well then. And since we ran out of bread and the buns from my mums house that I took home yesterday became hard after heating it up in the microwave,I decided to make some buns myself.

The batter was rather soft and sticky. But I didn't add any flour. You could if you want to. I just wet my hands so that I can more or less handle the batter. A tip I heard from one bread video recently. It didn't look that good but it taste superb. The only thing I would alter next time is to lessen the amount of salt. This recipe is supposed to be for burger/hotdog rolls. But I guess its up to your creativity.

Ingredients (Ingredients and method copy pasted from the site)

1 cup milk
1/2 cup water
1/4 cup butter
4 1/2 cups all-purpose flour
1 (.25 ounce) package instant yeast
2 tablespoons white sugar
1 1/2 teaspoons salt
1 egg

Directions

  1. In a small saucepan, heat milk, water and butter until very warm, 120 degrees F (50 degrees C).
  2. In a large bowl, mix together 1 3/4 cup flour, yeast, sugar and salt. Mix milk mixture into flour mixture, and then mix in egg. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes.I skipped all this since I used a breadmaker.Threw everything in and pressed the 'dough' button.
  3. Divide dough into 12 equal pieces. Shape into smooth balls, and place on a greased baking sheet. Flatten slightly. Cover, and let rise for 30 to 35 minutes.
  4. Bake at 400 degrees F (200 degrees C) for 10 to 12 minutes, or until golden brown.
  5. For Hot Dog Buns: Shape each piece into a 6x4 inch rectangle. Starting with the longer side, roll up tightly, and pinch edges and ends to seal. Let rise about 20 to 25 minutes. Bake as above. These buns are pretty big. I usually make 16 instead of 12.

Chicken luncheon rolls (2)

I finally found the real Chicken Luncheon. So yesterday I made a batch of Chicken Luncheon Rolls. I didn't use the previous recipe.i just have this thing about weighing my ingredients nowadays. So I took the recipe for my Cinnamon rolls and exchanged the butter to margerine and I was so amazed at the results.

The Chicken luncheon
o    1 cup warm milk
o    1 egg (room temperature), slightly beaten
o    1/4 cup margerine
o    1/4 cup vegetable oil
o    1/2 cup white sugar
o    1/2 teaspoon salt
o    3 1/2 cups flour plus more for dusting
o  2 1/4 tsp instant dry yeast
o    2 tbsp butter-melted
o    Chicken lunchen-Cut into strips
o    Sliced cheddar cheese-Cut into strips

Instructions
1.       If you're using a breadmaker add milk, egg, melted butter, oil, sugar, and salt. Add flour on top of all the liquid mixture sprinkle yeast on top. Choose the dough button and wait untill dough rises. You can also knead the dough by hand.
2.   When it has risen, punch out the air from the dough. Turn dough onto lightly floured surface and roll into a rectangle slightly larger than a 9×13 pan (rectangle). Spread surface evenly with melted butter.Arrange the chicken luncheon and cheddar cheese strips as you like.I used two pieces of each.
3.   Beginning with the long side, roll dough pinching the seam to seal.
4.   Preheat oven to 375 degrees F. Cut (I like using dental floss) into 12 equal slices and place them in a greased 9 x 13 baking pan. Cover with a damp towel and allow to rise for 30 minutes.
5.        To make the frosting, beat butter, cream cheese, and sugar on medium-high speed for three minutes. Set aside.
5.        Bake cinnamon rolls for about 15-18 minutes or until golden brown.
Baked. The dough is soft and fluffy

Left it in the oven for a while for the brown effect

Cinnamon Rolls -Recipe 2

This is another Cinnamon roll recipe that I have tried.reults are more or less the same except the amount is less.
Do try it out.
Soft, fluffly, homemade cinnamon rolls with cream cheese frosting.
Ingredients
  • 1 cup warm milk (115 degrees F)
  • 1 egg (room temperature), slightly beaten
  • 1/4 cup butter, melted
  • 1/4 cup vegetable oil
  • 1/2 cup white sugar
  • 1/2 teaspoon salt
  • 3 1/2 cups flour plus more for dusting
  • 1 (.25 ounce) package (2 1/4 tsp) instant dry yeast
  • 1/2 cup (1 stick) butter melted
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 3 tablespoons cinnamon
  • Frosting:
  • 1/2 cup butter, softened
  • 1/4 cup cream cheese, softened
  • 1 1/2 cups powdered sugar
Instructions
  1. In a KitchenAid mixing bowl, add milk, egg, melted butter, oil, sugar, and salt. Add flour on top of all the liquid mixture sprinkling yeast on top. Using the dough hook, knead bread mixture on speed 3 until dough is smooth and elastic adding additional flour as needed (approx. 5-7 min.). Place dough in a greased bowl and cover with a wet towel. Allow the dough to rise until doubled in size, approximately 1 hour in a warm area. *Hint: I typically preheat my oven to 200 degrees while dough is kneading and turn the oven off when kneading is complete. From there, I stick my covered bowl into the oven and leave the oven door cracked open to allow the dough to rise.
  2. In a small bowl, combine sugar, brown sugar, and cinnamon – set aside. Turn dough onto lightly floured surface and roll into a rectangle slightly larger than a 9×13 pan (rectangle). Spread surface evenly with melted butter. and sprinkle sugar mixture on top. Use your hands to make the entire surface is evenly coated. Beginning with the long side, roll dough pinching the seam to seal.
  3. Preheat oven to 375 degrees F. Cut (I like using dental floss) into 12 equal slices and place them in a greased 9 x 13 baking pan. Cover with a damp towel and allow to rise for 30 minutes.
  4. To make the frosting, beat butter, cream cheese, and sugar on medium-high speed for three minutes. Set aside.
  5. Bake cinnamon rolls for 20 minutes or until golden brown. Frost with icing.
Notes
*Dough can be kneaded by hand, bread machine, or KitchenAid Mixer using the dough hook. However, directions below are written for a KitchenAid.

Cinnamon rolls yang cukup wangi dan sedap

Assalamu'alaikum semua. Dah lama tak update blog ni. Sibuk dengan Ramadhan dan Syawwal.
Dah habis qadho dan Puasa Enam ke? Alhamdulillah saya dah pun menyelesaikan semuanya. Saya bermula dari hariraya kedua. Berterusan selama 17 hari. Terduga kesabaran sungguh.

Saya dah buat cinnamon rolls ni banyak kali dah.

1 sudu teh garam
1/2 cawan gula putih
21/2 sudu teh yis segera
Filling
Mentega
Serbuk kulit kayu manis
Kismis
Gula perang
Cheese cream frosting
125 gm cream cheese
1 cawan gula icing
1/2 sudu teh vanilla

Cara membuatnya:
  2. Jika anda menguli dengan tangan pastikan semua bahan sebati dan ulilah sehingga doh menjadi lembut.
  3. Setelah doh naik tumbuk dan keluarkan udara.
  4. Bahagikan kepada 3 bahagian yang sama besar.
  5. Leperkannya menjadi bentuk segiempat tepat.
  6. Sapukan mentega.
  7. Taburkan kismis, gula perang dan serbuk kulit kayu manis.
  8. Gulungkan ketat- ketat sehingga ke hujung.
  9. Potong dengan lebar 11/2" setiap satu. Susun di atas loyang pembakar.
  10. Biarkan ianya berehat selama 10 minit.
  12. Setelah siap bolehlah disapukan cream frosting sementara rolls masih suam.
Siap disusun sebelum dibakar
Setelah dibakar disapu cream cheese topping.

2 teaspoons instant dried yeast
160 ml lukewarm water

4. Divide the dough into 15 equal sized balls. Leave to rest for another 10 minutes.
5. Shape the dough into small balls and arrange on the baking tray, dusted with a bit of flour. Sprinkle with a bit of water. Let it prove till double the size.

Home-made Pizza

Assalamualaikum,
Bila dah yakin barulah saya memulakan operasi...hehehe.
Saya menguli menggunakan tangan sahaja.Namun hasilnya tidak mengecewakan.
Jom kita lihat bahan-bahannya.

2 cawan tepung gandum
2 st yis segera
1/2 st garam
1 st gula
2sb minyak sayuran atau minyak zaitun
1/2 cwn air suam untuk menguli

Caranya:

Emm...lazat.Cubalah!
