Banana Chocolate Chip Muffin

I don't know how long this recipe has been sitting the Drafts.I really have neglected this blog for some time now.
This recipe really works and the muffins have a nice taste to it.I got it from here when I went recipe hunting.


DRY INGREDIENTS:
2 cups All Purpose Flour
3/4 cup Sugar
1/2 cup Oats (I used quick cooking oats)
3/4 teaspoon Baking Soda
3/4 teaspoon Baking Powder
1/2 teaspoon Salt
3/4 cup Miniature Semisweet Chocolate Chips

WET INGREDIENTS:
1/3 cup Oil (I used Canola)
1 and 3/4 cups Mashed Ripe Bananas
1 egg
1/2 cup milk

1. Preheat oven to 375F/190C for 15 mins. Lightly grease and line the muffin tin with paper liners.
2. I pureed the bananas using a hand blender with a tablespoon of water in a large mixing bowl. You could simply mash them with a fork or potato masher too.
3. To the banana mixture add the sugar and oil; beat it well with a whisk or electric beater.
4. To the wet ingredients add the flour, oats, baking soda, baking powder and salt; mix until just combined.
5. Stir in the chocolate chips.
6. Fill each muffin cup 3/4ths full; around 3 tablespoons per cup.
7. Bake for 18-20 minutes or until a toothpick comes out clean.
8. Cool for 5 minutes before removing from pan to wire rack. Do not leave it in the tin for more than 5 minutes because the paper liner will start giving out moisture and the muffins will become soggy.

Chocolate Chocolate-Chip Muffins - Nigella Lawson

My brother in law staying in Kelantan came to visit us this morning.I knew he was coming.But I didn't know he brought three of his kids along.I haven't cooked anything.And I always make something for my nieces and nephews when they drop by.So while I was making Chicken Rice I asked syaima' and Umamah to make some muffins for their cousins.Invited them to watch and help them as well.Syaima' searched the recipe on the iPad and landed on this recipe from Nigella Lawson.It tasted good.Some may want it to be more chocalatey so you can more cocoa powder to the ingredients.

Ingredients
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
2 tablespoons best quality cocoa powder
3/4 cup superfine sugar
3/4 cup semisweet chocolate chips, plus 1/4 cup for sprinkling
1 cup milk
1/3 cup plus 2 teaspoons vegetable oil
1 egg
1 teaspoon pure vanilla extract




Directions

  1. Muffin tin with paper muffin cases
  2. Preheat the oven to 200CPut the flour, baking powder, baking soda, cocoa, sugar, and 3/4 cup of the chocolate chips into a large bowl. Pour all the liquid ingredients into a measuring jug. 
  3. Mix the dry and wet ingredients together, remembering that a lumpy batter makes the best muffins. Spoon into the prepared muffin cases. Sprinkle the remaining 1/4 cup chocolate chips on top and then bake for 20 minutes or until the muffins are dark, risen and springy.

Moist and fluffy.

Chocolate chocolate chip muffins with yogurt


Assalamualaikum,
Sebagaimana yang dijanjikan,saya nak bagi satu resepi muffin yang sangat sedap dan berkhasiat kerana di samping ianya mengandungi susu segar dan telur,ianya juga mengandungi yogurt! pagi semala saya mencuba dua resepi serentak.Lepas ni kena slow down sikit buat muffin dan cari benda lain plak untuk dicuba.anak-anak sampai tak larat makan dah myffin.Hehehe...
Isk...Dok sembang jer.Jom layan resepi ni yang saya ambil dari dapur Izzahdaut.
                                 

Bahan-bahannya:
1 1/2 cawan tepung gandum
1 sb membumbung serbuk koko
3/4 sk baking powder
1/4 sk soda bikarbonat
1/2 sk garam
1/2 cawan + 2 sb gula perang
3/4 cawan coklat chip
1 biji telur- dikocok sedikit
1 cawan susu segar
1/4 yogurt
1/4 minyak sayur
1 sudu kecil esen vanilla



Caranya:

1. Ayak tepung, serbuk koko, soda bikarbonat,serbuk penaik dan garam ke mangkuk besar.
2. Kemudian masukkan gula perang dan coklat chip. Gaul semuanya sebati. Ketepikan.
3. Dalam mangkuk yang lain, sebatikan telur, susu segar, yogurt, minyak sayur dan essence vanilla.
4. Masukkan bahan basah ke dalam mangkuk tepung tadi.
5. Adunan sedikit cair.
6. Masukkan ke dalam muffin cup 3/4 penuh atau hampir penuh.
7. Bakar pada suhu 180 C selama 25 minit.
 
Masya Allah...gebus dan comei sekali.Rasanya pun mmmm....!!

Chocolate chip muffins(2)

Assalamu'alaikum everyone and a very good morning.
Yesterday was a family outing day.My dear husband had cancelled his late morning class and we planned to head to SMI Hira' Jeram where Salman is studying to pick him up to attend a wedding.So I made 2 recipes of muffins for munching along the way.This is the second batch I baked.I post the first batch later.I've just gone muffin crazy nowadays.Always looking around for new recipes and trying them out.But so far savoury muffins don't attract any fans from anyone in the house.I've tried them twice but I find that I'm the only one eating them.Enough of all my ramblings.Lets see the ingredients and method that I got from allrecipes.com
Ingredients:
  • 2 cups all-purpose flour
  • 1/2 cup white sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 1/3 cup vegetable oil
  • 1 egg
  • 3/4 cup mini semi-sweet chocolate chips
  • 3 tablespoons white sugar
  • 2 tablespoons brown sugar



Directions

  1. Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
  2. In a medium bowl, combine flour, 1/2 cup sugar, baking powder, chocolate chips, and salt; mix well. In a small bowl, combine milk, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
  3. Fill cups 2/3 full. Sprinkle tops of muffins before baking with a combination of 3 tablespoons sugar and 2 tablespoon brown sugar.
  4. Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.

Another batch of Chocolate Chips Banana Muffins

Assalamu'alaikum dear readers.
Everybody loved the chocolate chip banana muffins that I made yesterday so much.The girls requested me to do some more today.Since there were left-over ingredients just enough for 1 recipe I made another batch this morning.
(Despite having a fever I still made them.Muffins are so adorable).you can see the recipe here.
Before going into the oven.I added some cocoa powder this time to give a more chocolaty taste to it.Topped it with more chocolate chips.
 The end product.
Its just so so soft and delicious.You got to try them.

CHOCOLATE CHIPS BANANA MUFFIN

Assalamua'alaikum everyone...
Its muffins again today!Had my sister-in-law,her husband,her pregnant daughter and her husband to my house just now.I already have some pre-mashed bananas in the fridge so just the right time to try this recipe that I had been eying for some time from Mamafami.Thanks sis!
Actual recipe from allrecipe.com.Lets take a look at the ingredients.




CHOCOLATE CHIPS BANANA MUFFIN
1 3/4 cups flour
2/3 cup sugar
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
1/2 teaspoon salt

1 egg
1/2 cup cooking oil
1/2 cup plain yogurt
1 teaspoon vanilla essence                                                                1 cup mashed ripe bananas (I used 4 medium sized ripe bananas)
3/4 cup chocolate chips

Before going into the oven

Method :

1. In a large bowl, sift flour, baking powder, bicarbonate of soda and salt. Add in sugar. Mix using a whisk.
2. In another bowl, combine egg, cooking oil, plain yogurt and vanilla essence.
3. Make a hole in the middle of the sifted dry ingredients. Pour in the egg mixture. Using a whisk, stir until just mixed. Do not overmix. Mixture will be crumbly.
4. Add in mashed bananas and chocolate chips. Mix lightly.
5. Spoon into the muffin pan lined with paper cups.
6. Bake in a pre-heated oven at 170 C for 15 to 20 minutes.
MUFFIN PISANG DAN CHIP COKLAT
Bahan -bahan :
1 3/4 cawan tepung gandum
2/3 cawan gula
1 sudu teh serbuk penaik
1 sudu teh soda bikarbonat
1/2 sudu teh garam
1 biji telur
1/2 cawan minyak masak
1/2 cawan yogurt plain
1 sudu teh esen vanilla
1 cawan pisang lenyek (mama gunakan 4 biji pisang bersaiz sederhana)
3/4 cawan chip coklat

Kaedah penyediaan :

1. Di dalam mangkuk yang besar, ayakkan tepung, serbuk penaik, soda bikarbonat dan garam. Masukkan gula dan kacau menggunakan whisk.
2. Di dalam mangkuk yang lain, satukan telur, minyak masak, yogurt plain dan esen vanilla.
3. Tuangkan bancuhan telur ke dalam bahan kering dan gaulkan sekejap sahaja
menggunakan whisk. Bancuhan akan kelihatan berketul-ketul.
4. Masukkan pisang lenyek dan chip coklat. Kacau sebentar sahaja.
5. Sudukan ke dalam acuan muffin yang telah dialas dengan cawan kertas.
6. Bakar di dalam ketuhar yang telah dipanaskan terlebih dahulu pada suhu 170 C selama 15 hingga 20 minit.

Chocolate Chips Muffin (1)

Muffin attack! Got the urge to try different kinds of muffins now. So after searching I ended up choosing this recipe from MamaFami's blog.Thanks a lot sis!



Lets look at the ingredients.I'm in my not so rajin mood so this is a copy paste from the actual recipe I took.


1 3/4 cups flour
1/4 cup cocoa powder
1 cup castor sugar
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
1 cup fresh milk
1 egg ~ lightly beaten
1/3 cup cooking oil
1 teaspoon vanilla essence
3/4 cups chocolate chips

 Method :

1. Sieve together flour, cocoa powder, baking powder, bicarbonate of soda and salt into a big bowl. Add in sugar. Mix well using a whisk.
2. In a smaller bowl, beat lightly the egg. Add in fresh milk, cooking oil and vanilla essence.
3. Pour the liquid into the dry ingredients. Mix lightly using a whisk.
4. Add in chocolate chips.
5. Spoon into the muffin cups layered with papercups, till almost full.
6. Bake in a preheated oven at 170 C for 20 to 25 minutes (depends on your oven)

 My chocolate chip was half brown choc chips and half white choc chips

Choc Chip Almond Muffin

Assalamualaikum pembaca budiman.
Semalam ramai betul yang berkumpul di rumah saya.Kakak ipar dari Kedah datang bersama dua orang anaknya dan seorang cucu.Datang menziarahi ibu mertua saya yang berada di rumah sekarang.
kemudian adik angkat saya Daya Norhayani bersama bekas pelajar kami nik Tasnim pun datang juga.
Memang full house. Tapi seronok sungguh.
Saya pun mulalah surf untuk mencari resepi apa untuk dihidangkan.Tajamkan skil la kono.Ahaks.
Hati berkenan pada resepi ini.Kebetulan bahan-bahan semua ada.Jadi saya pun mencuba membuatnya untuk sarapan pagi.
Memang sangat puas hati.Mari kita lihat bahan-bahannya.

Bahan-Bahannya :
2 cawan tepung naik sendiri (self-raising flour)
1/2 cawan serbuk koko
1/2 camca teh garam halus(digaul dan diayak)
2/3 cawan mentega (lebih kurang 170 g)
1 1/3 gula perang
2 biji telur gred A
1 cawan susu segar
1 camca teh esen vanilla



Inti(digaul dengan tepung)
1/2 cawan coklat chip
1/2 cawan kismis
1/2 cawan kepingan badam
Sedikit kepingan badan dan coklat cip utk hiasan


Cara membuatnya :


  1. Putar mentega dan gula hingga putih, masukkan telur satu persatu dan terus memukul hingga kembang. Perlahankan speed, tuang susu dan esen vanila, pukul hingga rata.
  2. Masukkan tepung yang telah diayak sedikit demi sedikit hingga habis, putar sekadar semua sebati sahaja.
  3. Masukan kepingan badam, kismis dan coklat chip yang telah digaul dengan tepung tadi, gaul dengan menggunakan spatula sehingga rata.
  4. Isi dalam acuan muffin pilihan sebanyan 3/4 penuh, tabur sedikit coklat cip dan kepingan badan. Bakar dalam oven yang telah dipanaskan pada suhu 180C selamat 25 - 30 minit, bergantung pada saiz acuan muffin dan oven masing-masing.

Fluffy Chocolate Chip Muffin

Assalamua'alaikum dear readers.
My family and I just came back from our vacation to Pulau Perhentian and Kota Bharu Kelantan.
So tired today.But since my son Salman was going back to hostel,I made some muffins for him and the the whole family's tea munch.
its very simple and doesn't take a lot of time for preparation.
I got my recipe here if you want to see the steps.

Ingredients:
2 cups of flour
1/2  cups sugar
1 tbs baking powder
1/2 tsp salt
1 tbs of brown sugar (heap)
1 egg
1 cup milk
1/3 vegetable oil
1-2 tsp vanilla
3/4 cups chocolate chips

Method:
  1. Sift flour and baking powder together in a bowl.
  2. Add sugar,salt and brown sugar.Mix.
  3. In another bowl mix the wet ingredient.(Milk,vegetable oil and egg)Beat a little.
  4. Then add the wet ingredients into the dry ingredients.Add in the chocolate chips.Mix well.


      5.   Scoop the muffin dough into a muffin paper cup that has      been placed in a muffin tin.
        6.   Fill untill half full.Dough can make 12 muffins.
        7.   Bake at 200c for 18-20 minutes.
