Pillow Soft Rolls

I made these rolls some time ago.But the recipe had been hibernating in the Drafts.
Its simple and eaten warm with Curry or anything else is very comforting.You can also put fillings as I did.Anything to your liking.I put sardines.

4 1/2 teaspoons active dry yeast
1/2 cup warm water (110 degrees F to 115 degrees F)
2 cups warm milk (110 to 115 degrees F)
6 tablespoons shortening
2 eggs
1/4 cup sugar
1 1/2 teaspoons salt
7 cups all-purpose flour
Directions

In a large mixing bowl, dissolve yeast in warm water. Add the milk, shortening, eggs, sugar, salt and 3 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough.
Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes (dough will be sticky). Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour.
Punch dough down. Turn onto a lightly floured surface; divide into 24 pieces. Shape each into a roll. Place 2 in. apart on greased baking sheets. Cover and let rise until doubled, about 30 minutes. Bake at 350 degrees F for 20-25 minutes or until golden brown. Remove to wire racks.




I made it again a few days later.This time without any fillings and we ate it with soup.Hehehe.


Kek Coklat Kukus (2)

Resipi ini telah berada di dalam Drafts sekian lama.Saya pun lupa dari mana saya mengambil resepinya.Harap tuan punya resepi halalkan ya!
Kek Coklat Kukus


Bahan-bahanya

2 cawan tepung gandum
2 sudu kecil baking powder
1/2 sudu kecil baking soda
3/4 ( tiga suku cawan) minyak masak
1 cawan gula
1 cawan air suam
1/2 cawan susu pekat
1 cawan serbuk koko ( ros guna serbuk koko jenama van hauten)
3 biji telur
beberapa titik esen vanila


*Untuk Topping dan Hiasan*
1/2 bar coklat masakan di campur dengan 2 sudu besar butter, 1/2 sudu besar gula halus dan beberapa titik esen vanila. guna kaedah double boiler, kemudian curah pada kek yang telah sejuk dan taburkan coklat rice diatasnya.

Cara-caranya

1. Ayak tepung gandum bersama, serbuk koko, baking powder dan baking soda, ketepikan. Panaskan pengukus.

2 Dengan menggunakan mixer, pukul telur hingga berbuih dan masukkan gula, pukul lagi sehingga kembang dan gula hancur.

3. Masukkan pula tepung yang siap di ayak tadi, sedikit demi sedikit berselang seli dengan air suam, kacau menggunakan senduk kayu atau spatula, kemudian masukkan pula esen vanila, susu pekat dan minyak masak, kacau sebati. jangan over mix, gunakan kaedah kaup balik.

4. Alaskan acuan bulat atau petak ber ukuran 20cm dengan baking sheet, curahkan adunan di dalam acuan dan tutup permukaan acuan dengan alumunium foil bagi mengelakkan air jatuh di atas permukaan kek dan kukus selama 1 jam ke 1 jam 30 minit, sejukkan, Selamat Mencuba.

Chocolate Chip Cake

I was cleaning up the kitchen cupboard this afternoon when my eyes lay on the mixer that my husband bought for me a few months ago.Suddenly I had the urge to bake!

What an awkward time!I had taken out almost everything from the cupboard but left it as it is and took my iPad.I searched for a bookmarked recipe.I used to do a lot of recipe-hunting before.And put them into folders so it was easy to grab a recipe when I wanted to.
And I chose this recipe.I uses sour cream and I didnt have any sour cream at home but I was still determined to make it.

I measured 1 cup of evaporated milk and added 1 tbsp of vinegar to it and left it aside.That was going to be my sour cream.Hehehe.
It was so easy to make and the batter was so soft and airy and it made so excited.
And the result?You just have to taste it for yourself!
Moist,soft and fluffy.And the chocolate chips really boosted the taste




½ cup unsalted butter, softened-I only had Buttercup so I used that
1 cup sugar
2 eggs
¼ cup canola oil
1 cup sour cream (not low fat)-I used 1 tbsp vinegar+1 cup evaporated milk
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon salt-I only put 1/2 tsp since the butter was already salty
1 teaspoon baking powder
2 cups all purpose flour
1 cup chocolate chips

1. Pre-heat oven to 175C .
2. In the bowl of a stand mixer, cream together the butter and sugar.
3. Add the eggs, oil, sour cream and vanilla.
4. Sift together the baking soda, salt, baking powder and flour.
5. Add the dry ingredients to the wet ingredients. Mix well (but don’t over mix – remember, too much mixing makes eggs tough).
6. Remove the bowl from the stand mixer and blend in the chocolate chips.
7. Grease  Bundt pan or an 8" square baking pan.
8. Pour the batter into the pan. Smooth the top with a rubber spatula.

9.Bake for 35-45 minutes.

In the oven it goes.

10.Use a cake tester to check for doneness. The tester should come out clean.
11. Cool in the pan for ten minutes and then turn out onto a cake plate.

This is upside down.look at all the chocolate chips.Yummy!

The actual recipe said serve, or allow to cool to room temperature, cover and serve the next day.But mine didn't stay for long coz I cut half into small cuts and brought it to Syaima' who has Qiyam at her school tonight.A quarter for my Aunty and the rest for me and Umamah to indulge.Yummy!

Swirly Peanut Butter Brownies

Assalamualaikum everyone,
Since my mum in law moved to my brother in-laws house in Kelantan I havent been baking much. And all my boys are in hostels. Leaving only the girls at home so Ummi (thats me) has lost her mood to bake or cook.
But since 4 of my kids are back home for the CNY holiday and we planned to visit my eldest son in Nilai I thought why not bake something.
So I went to the shop to get the ingredients and before long I started making this brownie. Well actually my daughter Syaima' did most of the work. I just monitored her and helped when needed.
So lets check out the recipe.

2/3 cup sugar
1/2 cup packed brown sugar
1/2 cup softened butter
2 tablespoon milk
2 eggs
3/4 cups flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup creamy peanut butter(I used the chunky one)
1 cup semi-sweet chocolate chips, melted OR 1/3 cup cocoa powder

Heat oven to 175C. Line a square 8X8 inch brownie pan with parchment paper and spray with nonstick cooking spray. Be sure to leave enough paper overlapping on the sides to be able to lift out cooled brownies.

Melt the semi-sweet chocolate chips in the microwave on 70% power for 1 minute. Stir until practically smooth. If it's very lumpy, go another 20 seconds at 70% power. A few lumps won't hurt anything.

(IF YOU DON'T HAVE CHOCOLATE CHIPS, stir in 1/3 cup cocoa powder after you divide the batter in half.)

Beat sugars, butter, milk and eggs in large bowl with electric mixer on medium speed. Stir in flour, baking powder and salt.






Divide batter in half, a little over a cup each half. Stir in peanut butter and peanut butter chips into one half. Stir in melted chocolate chips or 1/3 cup cocoa powder into the remaining half.






Use a 2 inch scooper to scoop chocolate batter into pan in a checkerboard pattern. Scoop peanut butter batter between the mounds of chocolate batter.






Swirl through batters with a knife or spreader for marbled design. Don't worry about the top of the batter being uneven, it will level off when the brownies bake.

Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool completely. Cut them as big or small as you like.





Delicous! Wonderful combination of chocolate and peanuts!

Apam Gula Hangus

Tengahari semalam sambil berehat saya menjenguk ke blog Azlita Aziz. Saya jadi ralit melihat gambar-gambar makanan yang dia masak.Memang sangat menarik.Dan resepinya pun sedap-sedap jugak.

Saya saje tengok-tengok resepi di bawah label Apam.Teringin nak mengapam pulak rasanya.Ada dua tiga yang berkenan di hati.Tapi akhirnya saya putuskan untuk buat Apam Guma Hangus ini kerana bahan serta cara membuatnya mudah serta tidak mengambil masa yang lama untuk menyediakannya.

Buat gula hangus dang bahan lain semua masuk dalam blender sahaja.Kukus pun sekejap.Saya letak dalam acuan apam yang aluminium tu.Ada sedikit baki tu yang masukkan dalam bekas lompang.Boleh jugak nak letak dalam mangkuk kertas.Tak sampai setengah jam semua beres.

Malah saya sangat berpuas hati dengan hasilnya.Sangat ringan dan lembut.Ibu mertua saya dan semua anak-anak pun suka.Dah tak payah layan saya membebel banyak-banyak.Jom kita layan resepinya.

1 cawan gula pasir
1 cawan air
Bahan yang di atas ini adalah untuk membuat gula hangus.Pastikan gula sudah benar-benar 'hangus' dan mula berbuih sebelum memasukkan air.Masak sebentar lagi sehingga semuanya cair.

2 biji telur
1/2 cawan minyak masak -Saya guna minyak canola
2 sudu besar marjerin-Saya suka guna majerin cap pelangi sebab teksturnya yang lembut dan rasanya yang sedap
2 sudu susu pekat
1 sudu teh soda bikarbonat.
1 1/2 cawan tepung gandum.


  1. Masak gula dalam periuk hingga kuning keemasan. Kemudian tambahkan air. Berhati2 semasa menambah air. kacau rata hingga gula larut. Kemudian sejukkan.
  2. Didalam blender masukkan telur,susu,minyak dan marjerin kisarkan anggaran 3 minit.
  3. Masukkan gula yang telah disejukkan tadi bersama-sama soda bikarbonat dan dikisarkan lagi.
  4. Akhir sekali masukkan tepung dan dikisar lagi sehingga sebati.
  5. Kukus adunan tadi di dalam loyang yang telah disapu dengan minyak masak selama 45 minit jika mengunakan loyang besar.


Masukkan adunan hingga 3/4 acuan sahaja

Dia naik gubus-gebas gitu...

Boleh juga menggunakan acuan mangkuk plastik atau paper cup. Tapi masa mengukus dikurangkan kepada 15 - 20 minit sahaja.Saya cuma kukus selama 15 minit kerana menggunakan acuan yang kecil.
Sekiranya adunan nampak cair bolehlah ditambah sedikit tepung agar apam tadi tidak mendap dan basah dibahagian bawahnya.
