Chocolate Cake With Mayonnaise



I had been eying to make this cake ever since I came across it.Chocalate Cake with Mayonnaise?It couldn't be more weirder for me at first.I've made cakes using buttermilk,and sour cream and yogurt but never with mayonnaise.So I said why not give it a try...

Actual recipe here.
  • 2 cups of all purpose flour
  • 1 cups of cocoa powder
  • 2 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1 cup mayonnaise
  • 1 cup castor sugar
  • 1 cup condensed milk
  • 1 egg
  • 1 cup hot water
  • 3/4 cup vegetable oil

Process:



  1. Preheat your oven to 175 degrees Celcius.
  2. Whisk the flour,cocoa powder,baking powder,bicarbonate of soda, put aside.
  3. In another bowl put mayonnaise,castor sugar,condensed milk,egg,hot water and vegetable oil.Mix well.
  4. Add the wet ingredients to the dry ingredients.Mix well.Just don't overmix it.
  5. Place in a  9"  square baking pan.
  6. Bake for 50-55 minutes.
  7. Let it cool on a rack before you put the topping.
  • For the topping you will need:(I only made half of this)

2 3/4 cups confectioner sugar
  • 6 tablespoons unsweetened cocoa powder
  • 6 tablespoons butter
  • 5 tablespoons evaporated milk
  • 1 teaspoon vanilla extract

Directions

  1. In a medium bowl, sift together the confectioners' sugar and cocoa, and set aside.
  2. In a large bowl, cream butter until smooth, then gradually beat in sugar mixture alternately with evaporated milk. Blend in vanilla. Beat until light and fluffy. If necessary, adjust consistency with more milk or sugar
Cracked but beautiful to my eyes...Hahaha.

Chocolate Oil Cake

I was going to my mums house yesterday morning.My Mak Tok has moved over to her house again and I was eager to meet her.I wanted so bad to bring something along.But every recipe I came upon had an ingredient that I didn't have at hand in the house.And I was so lazy to go out to the shop so early in the morning.I got so frustrated coz time was running out and I wouldn't be able to bake anything if I take more time looking for a recipe.
I don't know why but I take a longer looking for a recipe than making the the cake itself.And it happens almost all the time coz I will usually make different recipe each time.Sigh...!
Then I found this recipe and was I sooo happy coz it required ingredients that was available in the house.But I made a few minor alterations to it and it worked wonders!It makes quite a big cake.You can half it if you want.The actual recipe doesn't use egg or butter.
Lets check it out...

Ingredients
2 cups white sugar
3 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup unsweetened cocoa powder
2 cups water + 1 egg (I added this.I place the egg in a measuring cup and added water till it became 2 cups.You can ommit this if you want)
1 cup vegetable oil
2 tablespoons distilled white vinegar
1 teaspoon vanilla extract
2 tbsp sour cream (I added this coz I love the effect of adding it to my batter.Its optional)

Process:
1. Preheat oven to 175 degrees C.
2. In a large bowl, mix sugar, flour, baking soda, salt and cocoa.
3. Add water,egg,sour cream, vegetable oil, vinegar, and vanilla.
4. Beat by hand until smooth.
5. Pour into a 9x13 inch pan.I used a round 9" baking pan.
6. Bake 45 minutes, or until toothpick inserted into center of cake comes out clean.


For the topping I used;
 1/2 cup cocoa powder
1/2 cup evaporated milk
1 tbsp butter/ margerine


I love the cracks.

Mayo Doughnuts

Umamah requested that I make some doughnuts today. Infact she had been asking for a while now. I just wasn't too sure I can make them. But I thought I'd give it a try today. And was I glad I did!
The texture is soft and fluffy. Just perfect!
So what are you waiting for?
Lets check the ingredients.


2 1/2 cups of all purpose flour
1 1/2 tbs mayonnaise
1 1/2 tbs margerine
1 tbsp powdered milk
1 egg slightly beaten
140 ml warm water
3 tbsp sugar
4 gms or 1 1/2 tsp active dry yeast


Castor sugar for dusting the doughnuts.


Process:
1. Put all the ingredients in a bowl.Use a fork and stir everything untill it forms in crumbs.Then add the warm water.Mix well.Cover the bowl with cling wrap and put it in a warm place and let it rise for about 1 hour.
2. When the dough has risen punch out the air.
3.  Turn the dough out onto a floured surface, and gently roll out to 1/2 inch thickness. Cut with a floured doughnut cutter. Let doughnuts sit out to rise again until double. Cover loosely with a cloth. 
4. Heat oil in a deep-fryer. When the oil is hot slow down the heat to medium.You dont want to burn the doughnuts.
5.  Slide doughnuts into the hot oil using a wide spatula. Turn doughnuts over as they rise to the surface. Fry doughnuts on each side until golden brown. Remove from hot oil, to drain on a wire rack. Dip doughnuts into the castor sugar while still hot, and set onto wire racks to drain off excess..




Frying the doughnuts until golden brown.




Drain any excess oil then dip in the castor sugar
Served.Soft and fluffy doughnuts for tea.

Laura Vitale's Chocolate Chip Muffins


Actually I made these muffins earlier than my Chocolate Muffins but didn't have time to post it.Can't remember the occasion for baking them either.Fact is I don't bake for a reason.I do it coz I love baking.But of course I will make sure that there will be others to finish them up.Or else...You know what will happen.Ahaks.
This recipe is by far the best muffin recipe I've tried so far.Its from Laura Vitale.I do believe the sour cream plays a special role in making these muffins soft and fluffy and delicious.
Should I say more?I don't think so. You guys really need to try them.
Ingredients:
2 cups of Flour
1 Tbsp of Baking Powder
½ tsp of Salt
1/8 tsp of Ground Cinnamon

1 12 cups of Milk Chocolate Chips

2/3 of a cup of Whole Milk
½ cup of Melted Unsalted Butter
2 Tbsp of Sour Cream
2 Eggs
½ tsp of Vanilla Extract
1/3 cup of Granulated Sugar
1/3 cup of Brown Sugar
Process:
1) Preheat your oven to 175 Celcius. Line a paper cups in a  muffin pan, set aside.

2) In a small bowl mix together the first 4 ingredients and set aside.

3) In another small bowl add the chocolate chips and half a cup of the dry ingredients mix and toss to make sure each piece of chocolate chips are coated in the flour mixture.

4) In a large bowl mix together the remaining ingredients until combined. Add the dry ingredients and just mix to combine but not over mixing. Using a spatula fold in the chocolate chip mixture and make sure they are evenly spread out through out the batter.

5) Using a large ice cream scoop, divide the batter evenly in the prepared muffin pan.

6) Bake for 15 to 18 minutes or until a toothpick inserted in the center of the muffin comes out clean.
See how the chocolate chips runs through the muffins and doesn't just fall to the bottom?Awesome!



Sakinah Omar's Chocolate Muffins

I was having guests over yesterday morning.
What to bake?What to bake? 
Baking something will always pleases my guests.Especially those who have been tortured watching fotos of food I baked on FB. Huhuhu...
The least I can do is make them something when they come over.

I looked up for a chocolate muffin recipe but didn't find something that would suit my taste.
So I made my version of chocolate muffins which was an in between of Laura Vitale's Chocolate Chip Muffins and Nigella Lawson's Chocolate Chips Muffins.

I must say among all the muffin recipes I've tried I just love Laura's recipe.And I have to admit that my muffin was superbly delicious. You just have to try them!
I ran out of chocolate chips so I only threw  as bit as toppings.But have it in the dough would be absolutely awesome!

Ingredients:
1 3/4  cups of Flour
1 Tbsp of Baking Powder

1/3 cups of Cocoa

2/3 of a cup of Whole Milk
½ cup of Melted Salted Butter
2 Tbsp of Sour Cream
2 Eggs
½ tsp of Vanilla Extract
1/3 cup of Granulated Sugar
1/3 cup of Brown Sugar

1 tsp coffee+1 tsp warm water
1 1/2 cups of Chocolate Chips 


Process

Banana Muffins with Brown Sugar Cream cheese Frostings

Grandma’s Banana Bread
1 cup of granulated sugar
1 stick of unsalted butter, softened (room temperature)
 1 large egg, room temperature
 3 ripe bananas, mashed
 2 cups of all-purpose flour
 1 teaspoon of baking soda
 2 teaspoons of baking powder
 1 teaspoon of cinnamon
 1/4 teaspoon of nutmeg dash of salt
 1/2 cup of milk 2 teaspoons of vanilla extract


  1.  Start by turning the oven on 175 celcius.  
  2. In a large mixing bowl beat 1 stick of unslated butter, softened and 1 cup of granulated sugar.  Add 1 large egg.  
  3. Mash three ripened bananas, then add them to the sugar and butter mixture. 
  4.  Next, add 2 cups of all-purpose flour, the baking soda, baking powder, cinnamon, nutmeg, and salt.  
  5. Mix all of these ingredients together.
  6. Last, add the 1/2 cup of milk and 2 teaspoons of vanilla extract.  
  7. place paper cups in your muffin pan.  Pour the mixture in and place in the oven.  
  8. Bake for 12 - 15 minutes until toothpick when inserted in the middle comes out clean.  
When the banana muffin is done baking take out and set to cool before frosting it.                                           For Brown-Sugar Cream Cheese Frosting: Makes 2 1/2 cups

 1/2 cup (1 stick) of unsalted butter, room temperature
 8 ounces of cream cheese
 1 cup of packed light-brown sugar

 With an electric mixer on medium-high speed, beat butter, cream cheese, and brown sugar until combined and smooth.  Use immediately or store in an air-tight container in the refrigerator.
